Vi ho stupito eh????
Subito dopo aver postato le mafaldine, riparto con la pizza nonostante il caldo!!!! Apprezzate, vi prego, far funzionare il forno è un vero atto di coraggio e lo sarà ancora di più domani e dopo!!! Ma da giovedì, almeno al nord, si dice che la temperatura calerà e quindi voi potrete provare queste ricette!!
Pongy è la mia pasta madre che mi segue già da molti mesi e che rinfresco ogni 5-6 giorni sia che panifichi che no. Ormai, so che potrà sembrare assurdo per chi non lavora con il Lievito Madre, per me fa parte della famiglia. Tutte le volte che apro il frigorifero le dò un’occhiata: sta bene? Il colore? La densità….?
Da qualche settimana a Pongy si è aggiunta Pingy, la pasta madre per celiaci, senza glutine, che mi ha regalato Felix di “Un cuore di farina senza glutine”, un blog favoloso che vi consiglio!!! Proprio da questo blog ho preso la ricetta della pizza, che avevo assaggiato durante il corso gluten free e che avevo trovato fantastica.
Quindi oggi pubblicherò la ricetta non gluten free e domani aggiungerò anche la ricetta di pizza senza glutine, così ce ne sarà per tutti i gusti!!!
PIZZA CON LM CON GLUTINE
- 100 g di lievito madre rinfrescato il giorno precedente
- 280 gr di acqua o un po’ di più se necessario, dipende dalle farine….
- 350 gr di farina tipo 0 (io uso Petra o Rossetto, ma usate quella che avete)
- 150 g di farina manitoba
- 1 cucchiaino di miele
- 30 gr di olio extravergine di oliva
- 10 gr di sale
Per condire:
- Salsa di pomodoro
- Un panetto di mozzarella per pizza
- Una manciata di olive taggiasche
- Sciogliete il LM nell’acqua tiepida (metà quantità di acqua sarà sufficiente)
- Unire quindi nella planetaria o nel mixer gli altri ingredienti e lavorate con il gancio fino a quando l’impasto non si incorda (cioè si aggrappa tutto al gancio).
- Estraete dal boccale l’impasto e mettetelo a lievitare in un recipiente ricoperto con la pellicola (la pellicola deve essere a contatto con la pasta) fino a quando non raddoppia di volume.
- Trascorso il tempo di lievitazione stendete l’impasto in una teglia oliata allargandolo piano piano. ATTENZIONE se voi lo stendete e lui torna indietro, o si ritira, il glutine deve riposare ancora un po’ per smollare per cui ricoprite con pellicola e aspettate almeno 15 minuti ancora, poi riprovate.
- Mettete la teglia in forno con la luce accesa (senza luce nel periodo estivo). Non appena vedete che l’impasto è lievitato ancora, togliete dal forno, accendetelo a 240° statico e portatelo a temperatura.
- Farcite la pizza con la salsa di pomodoro, infornate nel ripiano più basso del forno.
- Trascorsi i primi 10 minuti di cottura , togliete la teglia dal forno e cospargerla con la mozzarella e le olive, rimettete in forno nel ripiano centrale e abbassate a 220°.
- Dopo 5 minuti, estraete la pizza e buon appetito!!!!

After several weeks to Pongy , Pingy has been added, the dough for celiac, gluten free, gave me Felix of “The heart of a gluten-free flour”, a fabulous blog that I recommend! From this blog I got the recipe for the pizza, which I had tasted during the course gluten free and I found fantastic.
So today I publish the recipe with gluten and tomorrow I’ll add the gluten-free one, so there will be something for everyone!
PIZZA WITH GLUTEN
- 100 g of yeast refreshed the day before
- 280 grams of water or a little more if needed, it depends on the flour ….
- 350 grams of all purpose flour
- 150 g of flour manitoba
- 1 teaspoon of honey
- 30 grams of extra virgin olive oil
- 10 g salt
For the sauce:
- Tomato Sauce
- A loaf of mozzarella cheese
- A handful of black olives
- Melt the yeast in warm water (half the amount of water will be enough)
- Combine in the planetary mixer all other ingredients and work with the hook until the dough does not stringers (everything clings to the hook).
- Remove the dough from the jug and put it to rise in a container covered with the film (the film must be in contact with the dough) until doubled in volume.
- After rising time , roll out the dough in a oiled baking pan, slowly widening. ATTENTION if you will roll out and it comes back, the gluten should rest a bit ‘so to loosen; cover with plastic wrap and wait at least 15 minutes longer, then try again.
- Put the pan in the oven with the light on (no light in summer). As soon as you see that the dough has risen again, remove from the oven, turn it 240 ° C static and bring to room temperature.
- Stuff pizza with tomato sauce, bake on the lowest shelf of the oven.
- After 10 minutes of cooking, remove the pan from the oven and sprinkle with mozzarella and olives, put in oven middle shelf and lowered to 220 °.
- After 5 minutes, remove the pizza and enjoy!!
