Freddo di nuovo??!! Da non crederci! E’ proprio una stagione strana che però ci permette ancora di utilizzare il forno senza problemi di surriscaldamento della cucina! Per questo mi sono voluta cimentare con un bell’arrosto di noce di vitello e verdure di stagione: gli ultimi asparagi, quelli sottili che mi piacciono tanto e le prime zucchine vere, quelle non di serra.
Pochissimi grassi, solo un cucchiaio per un chilo di carne, come scelgo di fare sempre più spesso ultimamente, sale arometico e verdure che ne dite? Ci volete provare anche voi?? Da me è piaciuto molto.
Per 6-8 persone, tempo di preparazione 15 min. tempo di cottura 75 min.
- 1-2 cucchiai di olio extravergine di oliva
- 1 kilo di noce di vitellone in un solo pezzo (se volete legatelo, ma anche no…)
- 4 zucchine di media grandezza lavate e tagliate a rondelle
- 1 mazzo di asparagi, solo le punte (i gambi li useremo per altro)
- sale aromatico q.b.
- pepe q.b.
- Versate l’olio nella padella che deve essere abbastanza larga. Lasciate scaldare qualche secondo e unite la carne.
- Rosolatela per bene da tutte le parti di modo che avvenga la famosa reazione di Maillard che fa chiudere i pori della carne e ne mantiene i succhi al suo interno.
- Salate e pepate.
- Aggiungete le zucchine, gli asparagi e qualche cucchiaio di acqua calda, salate la verdura.
- Coprite con coperchio e lasciate cuocere per 1 ora circa a fuoco molto basso.
- Tagliate la carne a fette e servite con la verdura di accompagnamento!

It’s cold again?! I do not believe it! It such a strange season but still allows us to use the oven without overheating the kitchen! That’s why I have decided for a nice roasted veal with season vegetables the last asparagus, the thin ones that I like so much, and raw zucchini, non-greenhouse.
Very little fat, only a tablespoon for two pounds of meat, as I choose to do more and more often lately, aromatic salt and pepper: what do you think? Try it!!
For 6-8 people, preparation time 15 min. cooking time 75 min.
- 1-2 tablespoons of extra virgin olive oil
- 1 kilo of beef in one piece (if you want to tie it, but it’s up to you …)
- 4 medium-sized zucchini, washed and sliced
- 1 bunch of asparagus, only the tips (the stems will bw used for something else)
- aromatic salt to taste
- pepper to taste
- Pour the oil into a quite wide pan. Let it warm up a few seconds and add the meat.
- Brown it from all sides so that the well-known Maillard reaction occurs and closes the pores of the meat and keeps the juices inside.
- Add salt and pepper.
- Add the zucchini, asparagus and a few tablespoons of hot water: add salt to vegetables.
- Cover with lid and simmer for about 1 hour over low heat.
- Cut the meat into slices and serve with the vegetables!
