Buongiorno!!! Come state? E’ arrivato il caldo eh…??!!! Accidenti, proprio ora che si deve rientrare in città…!!! Ho deciso di prepararvi qualcosa di molto fresco: un semifreddo ai pistacchi come quello che ho assaggiato al ristorante La Pineta di Luciano Zazzeri, uno chef che la sua stella Michelin la vale proprio tutta!!!
Il suo ristorante è a Marina di Bibbona, sulla spiaggia, una location essenziale e suggestiva, ma molto concreta: insomma si mangia proprio bene!!
Per 4 persone:
- 150 g di pistacchi di Bronte sgusciati, o ancora meglio, di pasta di pistacchi, che è quella che ho usato io
- 350 ml di panna
- 150 ml di latte
- 3 uova
- 1 bustina di vanillina
- 100 g di zucchero
- Prima di tutto dovete sbollentare i pistacchi in acqua, appunto, bollente.
- Lasciateveli per mezzo minuto o poco più e poi passateli immediatamente in acqua fredda così da levare facilmente la pellicina marroncina che li ricopre.
- Rimetteteli in acqua fredda e lasciateli a bagno un paio d’ore. A questo punto scolateli e tritatene la metà in un mixer, l’altra metà lasciatela intera.
- Montate la panna con un cucchiaino di zucchero e mettetela in frigorifero in attesa di utilizzarla.
- Portate il latte ad ebollizione in un pentolino e unitevi la vanillina ed i pistacchi sia sminuzzati che non, spegnete e lasciate riposare qualche minuto
- Nel frattempo, in un contenitore a parte, lavorate lo zucchero ed i tuorli con una frusta, o con il mixer, fino a quando il composto non sarà ben spumoso.
- A questo punto, versate poco per volta il latte raffreddato sul composto di uova.
- Rimettete la pentola sul fuoco e fare sobbollire, a fuoco dolce, la crema per 10 minuti circa, sempre rimescolando perché non si attacchi al fondo.
- Appena pronta, togliete la crema dal fuoco e lasciatela raffreddare, sempre rimestandola altrimenti si forma la pellicina in superficie.
- Montate, anche, gli albumi a neve ben soda e incorporateli alla crema, con un delicato movimento dal basso verso l’alto.
- Incorporate anche la panna sempre dal basso verso l’alto.
- Foderate uno stampo rettangolare con della pellicola trasparente e ricopritelo con il composto: sbattete piano il contenitore, in modo da fare assestare il tutto.
- Coprite con la pellicola trasparente e mettete a raffreddare nel freezer per almeno 6 ore.
- Prima di servire, lasciate il contenitore a temperatura ambiente per 15 minuti circa.
- Capovolgetelo su di un piatto di portata e servite a fette!

Hello! How are you? It ‘s getting very hot in Italy!!! Damn, now that we must return to the city …!!! I decided to prepare something very cool today: a pistachio parfait like that I tasted at the restaurant La Pineta by Luciano Zazzeri, a Michelin star chef really impressive!
His restaurant in Marina di Bibbona, on the beach, is a vital and charming place, very nice: in short, we had a very nice dinner!!!
For 4 persons:
- 150 g of shelled pistachios from Bronte, or better : pistachio paste, which is what I used
- 350 ml fresh cream
- 150 ml milk
- 3 eggs

1 bag of vanilla
- 100 g sugar
1. First blanch the pistachios in boiling water.
2. Leave them for half a minute or so and then drain them putting them immediately in cold water so you can easily remove the brown skins that covers them.
3. Replace pistachios in cold water and leave to soak for a couple of hours. At this point, drain and chop half of them in a blender, let the other half full.
4. Whip the cream with a teaspoon of sugar and put it in the fridge waiting for use.
5. Bring the milk to a boil in a saucepan, add the vanilla and chopped pistachios, turn off and let it rest a few minutes
6. Meanwhile, in a separate pan, mix sugar and egg yolks with a whisk or with mixer until the mixture is very fluffy.
7. At this point, gradually pour the milk in the cooled egg mixture.
8. Put the pot on the stove and simmer at low heat the cream for about 10 minutes, stirring because they do not stick to the bottom.
9. When ready, remove the cream from heat and let it cool,always stirring.
10. Beat the egg whites until very firm and join the cream, with a gentle movement from the bottom up.
11. Stir in the whipped cream always from the bottom up.
12. Cover a rectangular mold with plastic wrap and full up with the mixture: beat up the container.
13. Cover with plastic wrap and place in freezer to cool for at least 6 hours.
14. Before serving, leave the container at room temperature for 15 minutes.
15. Turn it upside down on a serving dish and serve in slices!
