Oggi avevo proprio voglia di un bel risotto.
Nel mio frigorifero albergavano sorridenti dei broccoletti verdissimi e due cespi di trevisana……..che dilemma!!!
Ho pensato che, però, avevo voglia anche di gamberi, per cui ho preferito optare per i broccoletti: la trevisana arriverà molto presto su questi schermi.
E’ proprio così, dall’apertura del frigorifero, che è nato questo risotto, un’alternativa golosa al solito broccoletti-e-pancetta, un risultato bello anche a vedersi, (purtroppo la mia foto, ahimè, non rende come potrebbe…..)
Buon appetito e….lasciatene un po’ anche per gli altri!
Per 4 persone:
- Misto per soffritto surgelato 1 cucchiaio o, se preferite, non più di 50 g. di misto carota-sedano-cipolla tritati
- 30 g. di olio extravergine di oliva
- 300 g. di broccoletti precedentemente lessati e scolati, tritati grossolanamente
- 320 g. di riso Carnaroli (18 min. di cottura)
- 1 bicchiere di vino bianco secco (circa 120-150 g.)
- 600 g. circa di brodo vegetale o acqua e dado vegetale
- 16 code di gamberoni, (anche scongelate ma…. che siano di ottima qualità!), pulite.
- sale q.b.
- 150 g. di stracchino morbidisssssssimissssimo…..
- Fate un bel soffritto con l’olio e le verdurine, senza farlo bruciare mi raccomando, anzi meglio un po’ stufato.
- Aggiungete i broccoletti e fateli insaporire per qualche minuto: salate moderatamente.
- Unite il riso e fatelo tostare per bene così si chiudono i chicchi e non esce il buono, (un minutino basta).
- Sfumate con il vino bianco a alzate il fuoco per un paio di minuti, così tutto l’alcool se ne va, voi continuate però a mescolare.
- Unite, un poco alla volta, il brodo: caldissimo mi raccomando o fermerete la cottura!!!
- Continuate a cuocere per almeno 10 min. sempre mescolando, poi aggiungete i gamberi.
- Proseguite per 3 min. circa, poi assaggiate di sale e controllate la cottura.
- Unite lo stracchino, mescolate e servite subito.
- E’ una delizia.
Broccoli rice: spring colors in a winter taste.
4 servings:
- 2 tbsp of skinned and minced onion + carrot + celery, even defrost
- 2 tbsp of extra-virgin olive oil
- 300 g. broccoli, previously boiled and drained, cut into bits
- 320 g. Carnaroli rice (cooking time 18 min.)
- 1 glass of dry white wine (120-150g.)
- 600 g. vegetable broth or water and vegetable stock cube
- 16 prawn tails cleaned (even defrost, but of best quality)
- salt to taste
- 150 g. soft fresh cheese (stracchino or crescenza if you can get it)
- Heat the oil in a saucepan over medium heat.
- Add the vegetable mix and cook it until translucent, about 5 min..
- Add the broccoli and sauté for 5 min. Season with a little salt.
- Add the rice and stir quickly, until is well-coated and opaque (this step takes one min. and cooks the starchy coating)
- Stir in the wine and cook until the alcohol has evaporated ( a couple of min.)
- Add the broth a little at a time: allow the rice to absorb each addition of broth before adding more and keep going until the rice has absorbed the liquid.
- After 10 min. add the prawns.
- After 3 more min. taste the salt and the cooking point.
- Add the cheese, continue until cooked through and serve.
- It’s delicious.
