A volte rimangono……….e il frigorifero si riempie, poi ce li dimentichiamo e dopo giorni li buttiamo……….spesso questa è la fine che fanno gli avanzi…..ma se troviamo subito il modo di utilizzarli, allora possono diventare una risorsa!!!
Queste lasagne, per esempio, sono state fatte con verdure che ho cotto nei giorni precedenti. Certo, io le ho cotte appositamente, ma niente in contrario ad utilizzare verdure cotte rimaste da ricette precedenti!!
Sono gustosissime, assolutamente vegetariane e…..da me sono finite tutte!!!
- misto di verdure (circa 500 grammi cotte, un chilo crude) cotte nel modo che volete voi, se sono avanzi, oppure in questo modo se le cucinate apposta.
- 100 g. di burro
- 100 g. di farina
- 1 litro di latte
- sale q.b.
- 1 confezione di pasta pronta per lasagne (quelle che non vanno cotte preventivamente sono perfette)
- 150 g. di provola a pezzetti piccoli
- 100 g. di parmigiano
- Preparate le verdure e tenetele da parte.
- Preparate una bella besciamella fluida e morbida: prima di tutto mettete in un pentolino il burro, fatelo sciogliere e aggiungete la farina setacciata (cioè passata col colino così non fa grumi) facendo cuocere il tutto per qualche minuto mescolando continuamente : attenzione: non fatele prendere colore o attaccare o siamo rovinati!!!
- A questo punto, togliete il pentolino dal fuoco e aggiungete il latte caldo mescolando il tutto con un cucchiaio meglio se di legno.
- Rimettete il pentolino sul fuoco, salate e fate cuocere a fiamma bassa finchè la salsa comincerà a bollire.
- Coprite il pentolino con un coperchio e fate cuocere la besciamella, sempre a fuoco basso, per 15 minuti, il tempo necessario per far addensare la salsa, mescolando di tanto in tanto.
- La vostra besciamella è pronta spegnete il fuoco e cominciate a creare.
- Imburrate una bella teglia e versatevi qualche cucchiaio di besciamella.
- Ricoprite con i fogli di pasta.
- Ricoprite con besciamella e verdure, aggiungete un poco di pezzetti di provola.
- Di nuovo pasta e di nuovo besciamella, verdure e formaggio fino ad esaurimento degli ingredienti.
- Terminate con besciamella e parmigiano.
- Cuocete in forno caldo a 200° per 20-30 minuti fino a quando la superficie non sarà ben dorata.
- Togliete dal forno e leccatevi i baffi!!
Lertovers stay in our fridge for days and days and very often we forget them…then, one day, we find them and throw them away…….such a pity!
Here a recipe perfect for vegetables leftovers, but if you have not cooked vegetables, you can cook them like here. Any kind of vegetable is ok for these recipe, make a mix and try, the besciamel sauce , a very creamy velvety texture cream easy and quick to make, will make the difference and the resulting lasagne will be unrivaled.
Serves 8:
- 18 oz.of cooked vegetables (leftovers are ok) or 35 oz. of mixed cleaned uncooked vegetables.
- 7 tbsp unsalted butter
- 7 tbsp all purpose flour
- 4 1/4 cups hot milk
- salt to taste
- pasta: precooked lasagna noodles
- 1/2 cup provola cheese
- 1/2 cup grated parmesan cheese
- Cook vegetables as recommendend above, or use your vegetable leftovers and set aside.
- Prepare your besciamel sauce: melt the butter in a medium heavy saucepan.
- Add flour and stir until smooth.
- Make sure there are no lumps. If you have a powerful gas stove, I would advice to do this step off the heat, the flour might burn.
- If you have a not so powerful electric stove than keep it on the stove at medium to low heat: cook until light golden brown, about 5 minutes, making sure it doesn’t burn.
- Meanwhile, heat the milk in separate pot until just about to boil.
- Add milk to the roux a little at the time, whisking continuously until very smooth, than bring to a boil.
- Cook until sauce thickens and remove from heat. Season with salt, mix well and set aside.
- Now start building the lasagna layers: spread 2 tbsp of besciamel sauce on the bottom of the buttered pan.
- Lay the noodles across the layer of sauce.
- Spread with a vegetables and besciamel sauce mix, sprinkle with provola cheese over the layer of noodles.
- Lay down the next layer of noodles, spread some other vegetable and besciamel mix over noodles, spread the provola cheese and keep going until you do not end all ingredients.
- Sprinkle parmesan cheese on top.
- Bake in preheated oven at 350 F (177 C) for 25 minutes.
- Enjoy a real italian traditional food!!
