Buon lunedì a tutti! Come state? Io benissimo, sono stata di nuovo in campagna e sono andata a trovate di nuovo l’Amedeo, il mio macellaio preferito…….dove ho fatto subito mio (!) un bel pezzo di filetto di manzo. State attenti quando lo comprate, che sia pulito e con poche venature di grasso, proprio come lo vende l’Amedeo, con quello che costa il filetto è un peccato pagare cari gli scarti…no…??!
Il filetto è gustosissimo e piace a tutti, l’unica cosa è che non siamo abituati a cuocerlo con fantasia….!…..O lo facciamo ai ferri, o con quelle esagerate salse francesi mooooolto poco dietetiche………..
Al massimo, se esageriamo, ci mettiamo un po’ di aceto balsamico…………..
E allora provate questi dadini di filetto alla birra!!!!
Per 4 persone:
- 4 fette di filetto di circa 100-120 g. ciascuna, tagliate a cubetti abbastanza regolari
- 30 g. di olio extravergine di oliva
- sale e pepe q.b.
- mezzo bicchiere di birra chiara (50 g. circa) , decidete voi quale
- verdura di accompagnamento a piacere, cotta o cruda.
- Fate saltare velocemente i cubetti di filetto nell’olio ben caldo fino a rosolarli per bene fuori, il cuore lasciatelo invece ben rosato.
- Salate e pepate a piacimento.
- Sfumate con la birra e alzate il fuoco: – alzando il fuoco, l’alcol evapora più velocemete – riabbassate il fuoco e fate assorbire un poco del sughetto, ma velocemete, il filetto troppo cotto non è buono!!
- Servite i cubetti caldi caldi contornati dalla verdura, io ho accompagnato con i broccoletti al vapore conditi con poco olio.
Beef tenderloin cubes with beer sauce

By my favourite butcher, Amedeo, I bought some beef tenderloin and I cooked them with beer for a nice and wealthy plate!
Just a nice change from grilled meat or fillet cooked in a tasty, but very fatty….., french sauce…!
4 servings:
- 4 slices of beef tenderloin cut into regular cubes (400-480 g. in total)
- 30 g. extra virgin olive oil
- salt and pepper to taste
- half a glass of light beer, whatever you like (50 g.)
- vegetables to serve with
- Sautè the meat cubes in hot oil until they are brown, pay attention not to overcook them, inside they must look pink.
- Season with salt and pepper.
- Add the beer and let it cook for few minutes on a high heat, so that the beer sauce will boil down.
- Serve hot together with the vegetables.
