Sono in Liguria, felicissima di esserci con un tempo splendido e un mare blu……! Ecco perchè oggi e domani vi proporrò delle ricette di questa terra dove si mangia davvero bene grazie alle materie prime eccezionali e alla capacità dei liguri di inventare piatti buonissimo con poco: davvero una cucina semplice, gustosa e speciale.
Vi racconto oggi il pesce con le olive taggiasche, i capperi e i pomodorini che cucinano spessissimo qui a Ponente, dove sono io, ma credo anche a Levante, casomai fatemi sapere se voi avete versioni diverse!
Per 4 persone:
- olio extravergine di oliva
- 1 spicchio d’aglio non pelato
- 1 piccolo rametto aromatico composto da rosmarino, salvia e timo (legare insieme tutti gli odori con dello spago da cucina)
- 4 bei filetti di orata di circa 150 g. l’uno.
- sale q.b.
- 10 pomodorini pachino tagliati in quattro spicchi
- 2 patate tagliate a spicchi e precedentemente sbollentate
- 1 bicchiere di vino bianco ligure (100ml circa)
- 2 manciate abbondanti di olive Taggiasche
- 1 manciata abbondante di pinoli
- In una padella capiente, o meglio ancora in una terracotta, far scaldare dell’ olio e aggiungere l’aglio e il ram etto aromatico.
- Togliere l’aglio e adagiare i filetti: scottarli da entrambe le parti per pochi minuti, regolare di sale.
- Aggiungere i pomodorini e le patate.
- Sfumare con il vino e aggiungere le olive e i pinoli.
- Togliere il mazzetto aromatico: cuocere per alcuni minuti (la carne del branzino deve rimanere leggermente al dente).
- Impiattare, nappare con il sughetto e servire caldo, accompagnando la portata con il vino che si è usato per la cottura.

to invent recipes with a little, very simple cuisine, tasty and special.
Let me introduce you this fish with olives and tomatoes very popular here in the West, where I am, but I believe in the East too!!
For 4 persons:
- Extra virgin olive oil to taste
- 1 clove garlic, unpeeled
- 1 small sprig rosemary composed of aromatic, sage and thyme (all tie together with string)
- 4 good bream fillets of about 150 g. each.
- Salt to taste
- 10 cherry tomatoes cut in four slices
- 2 potatoes peeled and cut into wedges, boiled and drained
- 1 glass of white wine (about 100ml)
- 2 handfuls of olives, abundant
- 1 handful of pine nuts, abundant
1. In a large frying pan, or better still in a terra-cotta, heat the oil and add the garlic and the sprig aromatic.
2. Remove the garlic and carefully lay the fillets: saute on both sides for a few minutes, adjust salt.
3. Add tomatoes and potatoes.
4. Sprinkle with the wine and add the olives and pine nuts.
5. Remove the bouquet garni: cook for several minutes (the meat of the sea bass should be slightly al dente).
6. Place on the plate, season with the sauce and serve hot.
