ENGLISH VERSION AFTER THE TALIAN.
Perchè questo silenzio, questa latitanza per più di un mese? I motivi sono stati molti: il polso rotto, per esempio, che doveva assolutamente avere la priorità sulla cucina e quindi mi ha obbligata a fermarmi e forse, per una volta, era ora che lo facessi….. Un progetto molto importante e ricco di sorprese che sta assorbendo la maggior parte del mio tempo libero, ma che presto, spero, sarà realtà! Ma anche un certo distacco che avevo bisogno di prendere, dopo tanto tempo, dalla mia creaturina, dal mio amatissimo blog. Chissà, forse inconsciamente avevo bisogno di capire se contasse qualcosa per tutti voi, se sarebbe sopravvissuto anche ad un periodo di silenzio da parte mia e devo dire che i risultati mi hanno emozionata: l’affluenza non è mai mancata, voi ci siete sempre stati!!

Questo risotto non ho fatto in tempo a fotografarlo….è finito in un battibaleno, fidatevi quindi e provatelo, è fresco, allegro, colorato, di effetto e anche sano: cosa volete di più??! Perfetto per una cena in famiglia, ma anche per stupire gli amici con poca fatica e tanta fantasia!
Per 4 persone tempo di preparazione 10 min. tempo di cottura 25 min.
- una cipolla piccola, tritata finemente
- un goccio di olio extravergine di oliva
- 320 g di riso Carnaroli cottura 18 min.
- 50 g di barbabietola cotta al forno (si compra già cotta) e tagliata a dadini
- il succo e la buccia grattugiata di 2 arance biologiche
- brodo vegetale caldissimo q.b.
- sale q.b.
- burro per mantecare q.b.
- parmigiano grattugiato q.b..
- una manciata di semi di papavero tostati
- Preparate un soffrittino con cipolla e olio e lasciate dorare per qualche minuto (attenzione a non bruciare la cipolla!!)
- Tostate il riso per un paio di minuti mescolando, in modo da chiudere bene i chicchi che non rilascerano la loro fragranza.
- Aggiungete la barbabietola, insaporite qualche secondo e poi bagnate con il succo di arancia e il brodo.
- Salate e lasciate asciugare il brodo di arancia mescolando, senza esagerare, di tanto in tanto.
- Mantecate con burro e poco parmigiano.
- Impiattate e spolverizzate con i semini: una meraviglia!!!
Why this silence for more than a month? The reasons are many: my broken wrist, for example, that just had to have priority over the kitchen and then forced me to stop and maybe, for once, it was time that I did it ….. A very important project and full of surprises that is absorbing most of my free time, but soon, I hope, will be a reality! But also a certain detachment that I needed to take from my little creature, from my beloved blog. I knew, maybe unconsciously, that I needed to figure out if this blog matters to all of you, if he would survive to a period of silence on my part and I have to say that the results have excited me: the turnout was never absent, you have always been there !

This risotto… I have not had time to photograph it …. ended up in a huff, but trust me and try it, it’s cool, cheerful, colorful, effective and also healthy, what more would you like?! Perfect for a family dinner, but also to impress your friends with little effort and a lot of creativity!
Serves 4: preparation time 10 min. cooking time 25 min.
- a small onion, finely chopped
- a dash of extra virgin olive oil
- 320 g Carnaroli rice (cooking 18 min.)
- 50 g of beetroot cooked in the oven (you buy already cooked) and diced
- the juice and zest of 2 oranges organic
- hot vegetable broth q.b.
- salt q.b.
- butter to thicken q.b.
- q.b. grated Parmesan cheese.
- a handful of toasted poppy seeds
- Sautè the onion whit olive oil and let it brown for a few minutes (carefully: do not burn the onion!)
- Toast the rice for a few minutes stirring, so as to close fine grains which will not release their fragrance.
- Add the beets, season a few seconds and then pour the orange juice and broth.
- Add salt and let to dry without exaggerating, stirring from time to time.
- Stir in a little butter and parmesan cheese.
- Serve and sprinkle with the sesame seeds, amazing!
